Cinnamon Roll Baked Oatmeal

Comforting baked oatmeal that tastes just like cinnamon rolls! Can be prepared in 10 minutes and refrigerates and reheats nicely!

  • 3 eggs (can sub flax eggs)
  • 2 cups milk of choice
  • 2 tbsp neutral tasting oil
  • 1 tsp vanilla
  • 3 cups rolled oats
  • 1 tsp cinnamon
  • 2 tbsp brown sugar or coconut sugar
  • 1 tsp sugar
  • ½ tsp cinnamon
  • 1 tbsp plain unsweetened yogurt
  • ½ cup powdered sugar
  1. Preheat the oven to 350F
  2. Grease a 9x9 pan and set aside
  3. In a large mixing bowl, whisk together the eggs, milk, oil, and vanilla
  4. Add the oats, cinnamon, and brown sugar and stir together
  5. Pour into the prepared 9x9 pan
  6. Mix together the topping ingredients in a small bowl and sprinkle over the top of the mixture inside the pan
  7. Bake for 30-35 mins
  8. While that cooks, prepare the icing topping. Just whisk together the yogurt and powdered sugar
  9. Allow the baked oatmeal to cool before drizzling with the icing - I used a squeeze bottle to apply the icing
  10. Cut slices 3x3 to achieve 9 servings
  11. Refrigerate leftovers, reheats nicely in the microwave
