Mediterranean Chickpea Burgers

A Mediterranean inspired chickpea burger topped with hummus, fresh sliced cucumber, roasted bell pepper, artichoke hearts and kalamata olives on a grilled ciabatta bun.

Serves: 5 slider sized patties
For the patties:
  • 1 tbsp flaxseed
  • 1 can chickpeas
  • 2 medium whole artichoke hearts (jarred or canned)
  • ¼ chickpea flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tbsp paprika
  • 1 tsp cumin
Optional Ingredients:
  • Grilled ciabatta rolls
  • Roasted red bell pepper
  • Sliced cucumber
  • Hummus
  • Kalamata olives
  • lettuce
  1. First mix the ground flaxseed with 3 tablespoons of water. Set this aside to thicken.
  2. Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
  3. Once the flax egg has thickened, add it to a food processor along with all the other ingredients for the patties. Blend until it looks almost like hummus but still a bit chunky.
  4. If you are making sliders, use ¼ cup measuring cup to measure out each burger. If you are making regular sized burgers, use ½ cup measuring cup. Form into patties and place on the prepared baking sheet.
  5. Bake for 10 minutes, flipping halfway through.
