French toast is one of my favorite breakfast foods, both while growing up and now. It’s easy to prepare and if you have a griddle, it’s super quick! It’s also a great way to use up sandwich bread.
I sometimes hesitate to post recipes like French toast because I assume everyone knows how to make these things. But then I remind myself of the first time my husband and I cooked breakfast together back when we were teens and still dating. Coincidentally, we were making French toast and he asked me where I kept the vinegar…
There isn’t any vinegar in French toast if you weren’t sure. However, when I told him this, he swore up and down that he knew there should be vinegar because he saw his grandma use it. As it turned out, he saw her use vanilla extract, not vinegar. 🤭

So what goes into French toast?
- Bread: While I do like the fancy stuff like brioche and thick Texas-style bread, most of the time I make it with sandwich bread because I always have it.
- Eggs: I use large eggs in this recipe but for the most part, the custard is fairly forgiving so I wouldn’t worry all that much about the size.
- Vanilla extract: I don’t like skipping vanilla in any sweet recipe because I love the flavor. If you really want, you can skip it.
- Ground cinnamon and nutmeg: I’ve always used cinnamon, but for the last few years, I’ve been adding nutmeg. I really enjoy it! And just like the vanilla, you can skip the nutmeg if you don’t have it, but under no circumstances should you skip the cinnamon. It wouldn’t taste the same without it!
- Brown sugar: Dark brown sugar makes it sweet but also helps the French toast brown really nicely.
- Milk: You can use any percentage of milk, as well as half & half or heavy cream for more decadence. I have not tried it with heavy cream YET, but that needs to change and soon!
- Butter: For greasing the pan or griddle. Don’t use oil, it won’t taste as good!

- cooling rack
- 2 large eggs
- 1 tsp vanilla
- 1 tbsp brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup milk
- 8 slices bread
- Whisk together the eggs, vanilla, brown sugar, cinnamon, and nutmeg.
- Pour in the milk and whisk to combine. Pour this mixture into a shallow dish, like a pie dish.
- Preheat the griddle to medium heat (about 300° F or 148° C)
- Once preheated, add a bit of butter to the griddle and spread it around.
- One at a time, dip each slice of bread into the egg mixture, coating both sides and then lay on the griddle. If the batter is pooling and giving the bread "feet," the heat is not high enough.
- Cook on each side for roughly 4 minutes or until each side has browned nicely. Transfer any finished toasts to a wire cooling rack rather than a plate to prevent them from getting soggy.
- Serve with butter and maple syrup.
