Toast is a great breakfast option and I would go as far to say it is the most classic breakfast choice. It’s easy, it’s quick, and you may not think so, but it is extremely versatile. Off the top of my head, I think of the comforting tofu scramble on toast, the highly popular avocado toast, and of course the classic (vegan) buttered toast. These varieties are common. I’m here to show you some uncommon toast ideas that I’ve been enjoying.
1. Peanut butter and Banana Toast
Banana and peanut butter go so well together, why not put it on a piece of toast? This is actually something I used to eat as a kid. Just spread some peanut butter (or any nut butter you like) on a piece of toast, top with sliced bananas and a sprinkle of cinnamon. Something I also enjoyed a lot when I was a kid was peanut butter and banana sandwiches. It’s essentially this exact recipe except it was sandwiched between two untoasted slices of sandwich bread. Bet it would be pretty good with some mini chocolate chips too… 😉
2. Cucumber Cream Cheese and Dill Toast
This idea actually came from finger sandwiches I made once when I was a teen. Back then I was so interested in making food but did not have much experience or confidence to make anything without a recipe. Unfortunately, I can’t remember which food blog posted said recipe but I owe it to them for this one! Spread some vegan cream cheese on a slice of toast, sprinkle with garlic powder, top with sliced cucumber and dill, and sprinkle with salt and pepper. I have to admit though, I do like this much better with dried dill.
3. Bruschetta Toast
Bruschetta is already a thing. We all know this. However, when we think of bruschetta, we think of those crusty toasted Italian bread slices, right? Well, this is an easy toast idea board and unless we want to dedicate a whole loaf of Italian bread to bruschetta then I say we just break some rules and eat it on regular sandwich bread toast. Toss some diced tomatoes in a bowl with salt, pepper, balsamic vinegar, extra virgin olive oil, and basil cut in “ribbons.” Keep this in the fridge and dish a bit of it out anytime you want some bruschetta toast. Optional but tasty: sprinkle some vegan parmesan on top.
4. Hummus and Veggie Toast
Hummus is essentially known as a dip but also fairly well known as a spread. Spread your favorite flavor of hummus on a slice of toast and top with whatever sliced vegetables you like! Here I have sliced cucumber, diced tomatoes, sliced red onion, and cilantro. Other veggies that would taste great with this: sliced radish, roasted bell pepper, fresh bell pepper, sliced carrots, and arugula.
