Whisk together the eggs, vanilla, brown sugar, cinnamon, and nutmeg.
Pour in the milk and whisk to combine. Pour this mixture into a shallow dish, like a pie dish.
Preheat the griddle to medium heat (about 300° F or 148° C)
Once preheated, add a bit of butter to the griddle and spread it around.
One at a time, dip each slice of bread into the egg mixture, coating both sides and then lay on the griddle. If the batter is pooling and giving the bread "feet," the heat is not high enough.
Cook on each side for roughly 4 minutes or until each side has browned nicely. Transfer any finished toasts to a wire cooling rack rather than a plate to prevent them from getting soggy.
Serve with butter and maple syrup.
